De origem serrana, foi nos campos de Lages, que come\u00e7ou a descobrir seu gosto pela culin\u00e1ria \u00a0da Serra Catarinense.<\/p>\n<p>\u201c A rusticidade traz consigo uma origem primitiva do alimento, e principalmente da mat\u00e9ria prima\u201d comenta o chef, que se diz avesso a comidas muito maquiadas e processadas, perdendo suas caracter\u00edsticas pr\u00f3prias, e muitas vezes perdendo sua pr\u00f3pria identidade.<\/p>\n<p>Quando resolvi viver em Florian\u00f3polis, nesta ilha repleta de natureza e beleza, est\u00e1 certeza s\u00f3 se agu\u00e7ou, uma vez que a Gastronomia aqui, e ligada totalmente ao mar, a produtos totalmente frescos, camar\u00f5es, peixes, crust\u00e1ceos, praticamente vivos, v\u00e3o direto para a panela, brasa, frigideira, acrescidas de um punhado de sal, e regados \u00a0com lim\u00e3o, onde o frescor dos produtos e o \u00a0real\u00e7a e valoriza o alimento.<\/p>\n<p>Assim, unindo estas tr\u00eas \u00a0paix\u00f5es, Provance, Serra e Ilha \u00a0que originou \u00a0a cozinha do Bistr\u00f4 da Pra\u00e7a, hoje um cl\u00e1ssico no cora\u00e7\u00e3o da cidade! O terroir, e um tempero nato, porque carrega consigo toda a atmosfera do ambiente em que aquele prato foi criado ou desenvolvido.<\/p>\n<p>Desde a sazonalidade \u00a0das \u00a0 Esta\u00e7\u00f5es at\u00e9 as influ\u00eancias das origens de fam\u00edlia, tudo importa quando buscamos exprimir o melhor de nossa cozinha!
